Ingredients

  • 500gam thịt ba rọi - 500 gam tôm tươi - xương gà hay heo
  • Mì quảng - Bánh tráng nướng - Hành lá, chanh, ớt xanh, tỏi, hàn
  • Bột nghệ, ớt bột, dầu hào, dầu phộng

Steps

  1. 1

    Xương gà hoặc xương heo luộc bỏ nước đầu, hầm xương với muối + củ hành nướng + củ hành tây làm nước dùng.

    Thịt heo luộc sơ với muối bỏ nước dơ, thái miếng vừa ăn, ướp heo với hỗn hợp gia vị : hành băm + tiêu + ớt bột + bột nghệ + dầu hào + đường + nước mắm, để khoảng 20-30 phút cho thịt thấm gia vị.
    – Tôm rửa sạch ướp với tí hạt nêm và tiêu

    Bắt chảo nóng cho dầu phộng vào phi thơm với tỏi, cho thịt đã ướp vào xào cho thơm (cho thịt vừa chín tới), tiếp đến cho tôm vào xào chung cùng ít màu dầu điều để tạo màu sắc hấp dẫn hơn. (Nếu thích ăn thêm trứng thì cho trứng vào kho cùng)

    Khi thấy tôm đã đỏ đều thì cho nước dùng vào sao cho nước xâm xấp mặt thịt và để lửa liu riu khoảng 15 – 20 phút cho thịt và tôm mềm và thật thấm. Phần nhân yêu cầu phải hơi đậm đà và nước nhân hơi béo 1 chút thì khi chan vô mì cọng mì sẽ ngon hơn.
    – Nước mắm ớt tỏi giả nhuyễn.
