1 tablespoonmustard seeds
1 bunchcoriander leaves chopped
2green chillies chopped
1/2 teaspoonturmeric powder
To tastesalt and sugar
As neededoil

Deep fry the eggplant slices adding salt and turmeric Powder

Make a paste of coriander leaves and mustard seeds

Now saute this paste for a second

Add water and the fried eggplant

Finally add sugar and chopped chillies

Garnish with chopped coriander leaves and serve
