Cut chicken into bite size pieces

In a large bowl, stir eggs, salt, pepper and 1 tbsp of vegetable oil. Mix well.

Add chicken pieces to mix and stir so that they're coated.

In another bowl, mix corn starch and flour.
Mix chicken in dry mix. - 5
Pour oil into skillet or wok so that it's deep enough to just cover chicken pieces.
Fry chicken and set aside on paper towels. - 6
Mix soy sauce, water, sugar, white vinegar and zest of orange in something. You will use this orange sauce later. Set aside for now.

Add 1 tbsp of vegetable oil to another skillet.

Add ginger and garlic. Stir fry for close to 10 seconds until fragrant.

Add and stir fry crushed chilies and green onions.

Add orange juice and stir for 5 seconds.

Add previously mixed sauce and bring to boil.

Add cooked chicken and stir until all the chicken is coated.

Mix cornstarch and a little water until it's smooth and add slowly to the stir fry so sauce slightly thickens.

Heat until sauce is thickened.
