This is the easiest way of preparing dum aloo without onion and garlic that one can have during any fast(upavas).
Steps

Heat some oil in a wok and add the potatoes with some salt.

Cover the wok with a lid and saute it in between.

Fry them untill golden brown

Remove it from the wok.

Add some oil if required. Add the cardamom and cloves and chopped green chillies. Let them splutter.

Add the garlic paste with a little amount of salt and fry it till the raw aroma dissapears.

Add the well beaten hung curd and red chilli powder and bring it to boil.

Add the potatoes and saute them very well.

Add some water and cover it with a lid.

Add the remaining amount of salt and check whether the potatoes have become soft.

If yes add the sugar.

Once you get the desired consistency of the gravy, add the garam masala powder,kasuri methi and ghee.

Mix them very well and remove it from the flame.

Your dum aloo is ready to be served
