  • Main
  • 600 mldouble cream
  • 400 mlmilk
  • 1 1/2 lbbrown crab meat
  • 1 dashbrandy
  • 3 pinchground nutmeg
  • 3 tbsppassion fruit puree
  • 14 slicegelatin

    Whizz the crab, add puree, brandy and season. Add dash salt and pepper.

  2. 2

    Slowly bring milk and cream to the boil.

  3. 3

    Add gelatine and completely dissolve. Allow to cool slightly.

  4. 4

    Add milk and cream mixture to crab mixture.

  5. 5

    Pour into individual pots and put in fridge for a minimum 3 hours.

  6. 6

    Turn out of pots on to small plates. Add passion fruit and bread to garnish.
