Preheat oven to 350°F.

Mix all ingredients in order from oil to flour. Combine salt, baking powder, baking soda, cinnamon, and cloves in small bowl and mix well - then add to the pumpkin mixture. Add nuts, optional.

Makes 3 - 1 pound loaves or 7 mini loaves. Spray each pan with nonstick spray, then sprinkle with sugar. Fill each pan about 2/3 full of batter. Bake for about an hour. Freezes well.
