Ingredients

8 servings
  • 6Potatoes, peeled + cubed
  • 2Leeks, chopped
  • 2Onions, chopped
  • 1Rib celery, sliced
  • 1 tbspDried parsley flakes
  • 1 tspSalt
  • 1Pepper
  • 1/3 cupButter
  • 4 cupChicken broth
  • 1 cupWater
  • 13 ozCan evaporated milk
  • 1Chopped chives

Steps

  1. 1

    Combine all ingredients except milk and chives in slow cooker.

  2. 2

    Cover. Cook on Low 10-12 hours, or High 3-4 hours. Stir in milk during last hour.

  3. 3

    If desired, mash potatoes before serving.

  4. 4

    Garnish with chives.
