Set convection oven to 350

Trim the steak of excess fat, but leave a coating of fat around the sides of the steaks. Season the steaks with pepper.

Combine the salt and water to make a paste (it should be the consistency of wet sand) spread half the mixture over a half sheet tray. Lay the steaks on the tray. Spread the remaining salt over the tops of the steaks, covering the meat completely.

Roast the steaks for 30 minutes

While the steaks roast, toast the bread, and keep it warm

In chafing dish or large skillet, melt the butter

Remove the steaks from the oven, and discard the salt crust. Slice the meat, cutting against the grain on a diagonal, into 1/4 inch slices

Raise the heat under the melted butter so that it sizzles, but does not brown. Add the slices of steak and cook 30-60 seconds per side, or to the desired degree of doneness. Place the steak slices on the toast, spoon some butter over, and serve immediately.
