Ingredients

  1. 3 lbbeef tenderloin
  2. 1 1/2 tbspdijon mustard
  3. 1 1/2 tbspfresh rosemary
  4. 3minced cloves of garlic
  5. 2 tspextra virgin oilive oil
  6. 2 tspchopped pink peppercorns
  7. 1/4 tspsalt
  8. 1 cuppomegranate juice
  9. 1 cupdry red wine
  10. 1 cuplow sodium beef broth
  11. 1bay leaf
  12. 2 tbspminced shallots are added to wine mixture after boiled down to 1 cup

Steps

  1. 1

    preheat oven to 450

  2. 2

    brush all over with first 7 ingredients and let stand on rack set for 30 minutes

  3. 3

    roast till temp. is 130

  4. 4

    meanwhile bring the pomegranate mixture to a boil in Med. saucepan

  5. 5

    reduce heat and cook till mixture is reduced to 1 cup

  6. 6

    discard bay leaf

  7. 7

    transfer beef to cutting board and tent for 15 min.

  8. 8

    the internal temp.will increase to 135 for Med. rare

  9. 9

    boil shallots till reduced to 3/4 cup about 5 min.

  10. 10

    remove from heat and whisk in 2 tsp. cut up chilled butter until blended

  11. 11

    stir in 6 tbsp. pomegranate arils and any juice accumulated from beef

  12. 12

    slice beef and serve with sauce
