brush all over with first 7 ingredients and let stand on rack set for 30 minutes

roast till temp. is 130

meanwhile bring the pomegranate mixture to a boil in Med. saucepan

reduce heat and cook till mixture is reduced to 1 cup

discard bay leaf

transfer beef to cutting board and tent for 15 min.

the internal temp.will increase to 135 for Med. rare

boil shallots till reduced to 3/4 cup about 5 min.

remove from heat and whisk in 2 tsp. cut up chilled butter until blended

stir in 6 tbsp. pomegranate arils and any juice accumulated from beef

slice beef and serve with sauce
