I'm not a big fan of eating the same meals day after day. Which is how I worked out a good recipe for a double serving of creamy pasta salad (or a large single serving). I use whole grain pasta, to up the nutrition a little and to make it more filling. It makes a great lunch.

Ingredients

2 serving
  1. Pasta Salad :
  2. 1/3 cupelbow pasta, uncooked
  3. 1/4 cuppeas (I use frozen)
  4. 1small carrot, peeled and shredded
  5. 1small chicken breast, grilled and diced
  6. 1 tbsp.freshly shredded white cheddar cheese
  7. Dressing :
  8. 1 tbsp.mayo
  9. 1 tbsp.sour cream
  10. 1 tsp.apple cider vinegar
  11. 1 tsp.honey
  12. To tastesalt and pepper, garlic powder

Steps

  1. 1

    In a smalk bowl, whisk together the mayo, sour cream, apple cider vinegar, honey and salt and pepper and garlic powder to taste. Set this aside.

  2. 2

    Cook the pasta according to the package directions to al dente. In the last two minutes of cook time, stir in the peas.

  3. 3

    Drain the pasta and peas into a colander and rinse with cold water.

  4. 4

    In a large bowl, mix together the pasta, peas, shredded carrot, shredded cheese and diced chicken. Pour the dressing over the top and stir it in. Taste for any additional seasoning you'd like to add.

  5. 5

    You can eat this immediately or you can chill in the fridge until you're ready.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
