4 sliceof whole meal seeded bread
1 tbspAvacado oil (or any other oil, of course)
1 tbspFreshly squeezed lime juice
1 smallonion- diced
8Sliced mushrooms (I prefer chestnut mushrooms)
1 tbspSoy sauce
2 tbspSoy cream (you can use vegan yoghurt if preferred)

Preheat oven to 180c/350f.

Bake bread for 5mins.

Meanwhile, fry the onion and mushrooms in the oil and lime juice until soft. Add cream and soy sauce.

Cut toast to triangles and arrange on 2 plates.

Pour over mushroom mix and garnish with some parsley.
