Steps

Place the pasta in a pan of cold water and bring to the boil. Once at boiling point, take off the heat and set aside with a lid on.

Place the tofu, leeks, garlic, peas,mushrooms, walnuts, thyme and milk In a pan and bring to the boil. Simmer for 10mins.

Put the cornflour into a small dish and mix with lime juice until smooth. Stir into the milk mix until it thickens.

Drain the pasta and mix into the milk mix.

Add the coriander and some cracked black pepper.
- 6
Serve in deep dishes garnished with red onion rings or apple slivers and drizzle with some hemp seed oil.
