Ingredients

  1. 250 gramsPasta
  2. 125 gramsTofu
  3. 2Chopped leeks.
  4. 3Chopped garlic cloves.
  5. 125Frozen peas.
  6. 8Sliced mushrooms
  7. 50 gramsChopped walnuts
  8. 1 tspChopped thyme.
  9. 500 mlSoy or oat milk (or any other non-dairy milk of your desire)
  10. 1 tbspCorn flour.
  11. 1Lime - juiced. (You only need the juice)
  12. 1 tbspChopped coriander.

  1. 1

    Place the pasta in a pan of cold water and bring to the boil. Once at boiling point, take off the heat and set aside with a lid on.

  2. 2

    Place the tofu, leeks, garlic, peas,mushrooms, walnuts, thyme and milk In a pan and bring to the boil. Simmer for 10mins.

  3. 3

    Put the cornflour into a small dish and mix with lime juice until smooth. Stir into the milk mix until it thickens.

  4. 4

    Drain the pasta and mix into the milk mix.

  5. 5

    Add the coriander and some cracked black pepper.

  6. 6

    Serve in deep dishes garnished with red onion rings or apple slivers and drizzle with some hemp seed oil.

what kind of tofu do you use. if firm tofu is used, do you chop it? or is it silken tofu for a creamy sauce?
