Ingredients

2 servings
  1. 125 gramsFinely chopped & cooked cauliflower.
  2. 3 tbspFrozen sweet corn
  3. 4 tbspOat milk (you can use any other non-dairy milk if preferred)
  4. 1 tbspAvacado or Rapeseed oil.
  5. 1 tspTurmeric
  6. 125 gramsCrumbled tofu.
  7. 4 sliceof whole meal seeded bread.
  8. 1 tbspSoyannaise (vegan mayo)

Steps

  1. 1

    Boil sweet corn in milk for 5mins.

  2. 2

    Liquidize the mixture or mash if preferred.

  3. 3

    Add in the oil, turmeric, tofu, cauliflower and salt & pepper if wished.

  4. 4

    Simmer until hot.

  5. 5

    Toast the bread and spread with soyanaise.

  6. 6

    Top with tofu and cauliflower mix.

  7. 7

    Garnish with a pinch of nutmeg, some parsley and tomato wedges.
