Was looking for a different meal for Easter Sunday when I stumbled on this Lemon Pepper Chicken. I myself am not big on lemon but I was pleasantly surprised. It is perfect for a fresh, hearty spring meal. Delish!

Was looking for a different meal for Easter Sunday when I stumbled on this Lemon Pepper Chicken. I myself am not big on lemon but I was pleasantly surprised. It is perfect for a fresh, hearty spring meal. Delish!

Preheat oven to 400 degrees

In a medium bowl combine flour, lemon pepper, salt, and zest of one lemon. Toss chicken breasts in the flour mixture until evenly coated. Slice 1 lemon into thin slices.

In a large skillet over medium high heat, heat EVOO. Add chicken in a single layer and cook 5 min or until the bottom is golden. Flip cook another 5 min.

To the same skillet, add the chicken broth, butter, garlic and lemon slices and transfer skillet to the oven. Bake until the chicken reads an internal temperature of 170 degrees F. and the sauce reduces. 10-15 min.

Remove skillet from oven and spoon sauce over chicken. Serve and enjoy!
