Aaloo tomato gravy in rich coconut milk

This is my own innovation. In our region aaloo tomato is a very popular combination. Once I did not know what to do with fresh coconut. So I used it in making this curry. Goes well with phulka, chapati, poori, white rice or fried rice.

Steps

Heat oil in a kadai add rai, jeera, green chillies, onion, salt and sauté till golden brown

Add ginger garlic paste, potato and fry for a while and add chopped tomatoes and half glass of water, cook till potatoes are half done

Add one and half cup of coconut milk and allow it to boil
- 4
Add chillie powder, Dhania powder(check for my Dhania powder procedure) chopped mint and adjust salt

Dish out and garnish
