In a large heat proof bowl, place egg yolks, egg and sugar over a pan of simmering water. Using an electric whisk, whisk until mixture becomes a light froth turning into a thick mousse-like mixture.

This should take 5 mins.

Drizzle in spoonfuls of marsala, whisking all of the time.

Remove pan of water and continue to whisk, 1 min on high, 2 mins on medium and 4-5 mins on low.

Serve in tall glasses with fresh biscuits e.g. savoiardi
