Trim the long feelers and sharp tips from the shrimp. Slice half a lemon. Make three cuts on the surface of each red date. Cut the green part of the green onion into thin strips.

In a small pot, add the water, red dates, angelica root, and goji berries. Bring to a boil over high heat.

Once boiling, turn off the heat. Stir in the salt, sugar, and Shaoxing wine. Let cool and set aside.

In another pot, add about half a pot of water and the ginger slices. Bring to a boil over high heat, then add the lemon slices and shrimp.

When the shrimp curl into a 'U' shape, remove them from the pot.

Add ice and cold water to chill the shrimp briefly, then remove them.

Place the chilled shrimp into the Shaoxing wine marinade, then refrigerate.

To serve, arrange the shrimp on a plate and garnish with the red dates, goji berries, and green onion strips.
