Make sure you fillets are dry with no water.

Put enough oil in your pan and heat it till very hot.

Add your fillets, and don't stir till thy start to brown.

Remove them and wipe with serviettes to remove excess oil.

In another pan, add the onions with very little oil and cook them till almost brown. Add the garlic and ginger and cook for 1 minute.

Add the tomatoes cover to cook. Add salt, sugar and royco cubes and stir kidogo.

Remove the sauce from the pan and put into a blender and blend.

Return the blended tomatoes to pan n cook into a thick paste.

Add the fillet and cover so the fillets can absorb the flavours. Add some dhania and serve hot.
