A great way to include butternut squash in your diet. You can also pan roast the butternut squash. Add any seeds of your choice. The sourness of green apple and sweetness of squash balance each other.

A great way to include butternut squash in your diet. You can also pan roast the butternut squash. Add any seeds of your choice. The sourness of green apple and sweetness of squash balance each other.
Steps

Preheat the oven to 180°C.

Mix butternut squash with olive oil and half the amount of salt.

Roast in the oven for 15 minutes or until done.

Let the roasted butternut squash cool down completely.

In the meantime, cut the apple into cubes. Sprinkle a bit of the lemon juice over it.

Roast the sesame seeds and let it cool.

Add lettuce leaves, torn into bite size or the spinach to the apple.

Add the chopped spring onion and the butternut squash.

Mix in the remaining salt, pepper, chilli flakes, sesame seeds and lemon juice.

Serve.
