The sausages in Japan are mainly European style smoked sausages. I came across uncooked raw English style sausages in Australia for the first time. I recommend to use smoked sausages for this dish. I use Kransky sausages that are commonly available in Melbourne where I live. This curry flavoured potato salad is one of my family’s favourite dishes. Every time I cook it, my family members happily enjoy it.

Ingredients

15 minutes
4 servings
  1. 3-4Potatoes *about 400g
  2. 300 gSmoked European Style Sausages *I used Kransky Sausages
  3. Salt & Pepper
  4. 1/3-1/2 cupJapanese Mayonnaise
  5. 2-3 teaspoonsCurry Powder
  6. 2Spring Onions *finely chopped

Steps

15 minutes
  1. 1

    Peel Potatoes and cut into chunky pieces. Cook Potatoes in salted water until soft. Drain well.

  2. 2

    Cut the Sausage(s) into chunky pieces. Heat a frying pan or grill pan, cook sausage pieces until lightly browned.

  3. 3

    Place cooked Potatoes in a large bowl and season with Salt & Pepper. Add browned Sausage pieces, chopped Spring Onion, Japanese Mayonnaise and Curry Powder, and mix to combine.
