Lemon Ricotta Pasta With Seared Scallops

Ingredients

  1. 12Scallops
  2. 1/2 boxFettuccine Noodles
  3. 1 cupPeas
  4. 1 1/2 cupRicotta Cheese
  5. 4 tbspOlive Oil
  6. 1 tbspButter
  7. 1/4 cupLemon Juice

Cooking Instructions

    Boil noodles until al dente.

    Rinse scallops.

  3. 3

    Then pat dry.

  4. 4

    Put one table spoon of olive oil and butter into a high heat pan.

    Add scallops in batches.

  6. 6

    They should cook for two minutes on each side. This is how they should look. ( l was so nervous) 🙈

    Drain pasta then put back in the pot and add the rest of the olive oil. (3 tbs)

    Now add lemon juice.

    And lemon zest.

  10. 10

    Now add your peas.

  11. 11

    Then ricotta and stir until everything is combined.

  12. 12

    Top with your scallops and serve.
