Ingredients

  • 3leeks, halved and sliced
  • 2potatoes, diced
  • 1celery root, diced
  • 4 1/2 cupstock
  • 3 Tbspbutter
  • 1 cupbuttermilk or 1 c soy milk + 2 T lemon juice

Steps

  1. 1

    Fry leeks in butter with pinch of salt...10 min

  2. 2

    Add potatoes and celery root to fry pan...10 mn

  3. 3

    Add stock, bring to boil

  4. 4

    Cover, simmer...30 min

  5. 5

    Stir in buttermilk or substitute and puree

  6. 6

    Add any additional seasonings
