12 CupsSugar
1 1/4 CupCorn Starch
1 tsp.Nutmeg
4 tsp.Cinnamon
2 tsp.Salt
5 QuartsWater
6 Tbsp.Lemon Juice
12 qt.Apples, peeled, cored, and chopped.

Mix Sugar, corn starch, nutmeg, cinnamon and salt in large stock pot.

Stir in water and bring to boil over medium heat.

Add apples and lemon juice, stir well.

Fill clean jars leaving 1/2 inch head space.

Wipe rim of each jar and cap

Process in water bath for 20 minutes.
