Preheat oven to 375°F

Once the oven is preheated, spread oats and coconut evenly on a baking sheet and toast in the oven for 10 minutes

Combine honey, peanut butter, vanilla and salt in a small pot over low heat, until you have a nice creamy mixture

Once the oats and coconuts are done, carefully transfer them to a medium sized mixing bowl. Next add the creamy mixture as well as any optional nuts. Mix thoroughly. (If adding chocolate chips, let the mixture cool for about 15-20 minutes before adding them)

Pour the contents of the mixing bowl into a greased 8"x8" baking pan. Smooth out and pack the mixture in to all the corners till its evenly spread out.

Bake in the oven for 15 minutes for a satisfying crunchy bar or 8-10minutes if you prefer them as a chewy bar.

Let them cool completely before removing from the pan. Cut and serve.
