Delicious, light, healthy salad you can have as a whole meal or as a side dish. Perfect for vegetarians if you leave out the chicken. Serves 4-6.

Delicious, light, healthy salad you can have as a whole meal or as a side dish. Perfect for vegetarians if you leave out the chicken. Serves 4-6.

Ingredients

  1. 1 packagebaby spinach
  2. 1/2orange bell pepper
  3. 1/2yellow bell pepper
  4. 1/2 pintcherry tomatoes
  5. 4-6button mushrooms (optional)
  6. 2-3green onions (optional)
  7. 1-2grilled chicken breasts (or sauteed tofu)
  8. ranch dressing

Cooking Instructions

  1. 1

    While chicken is cooking (grilled or pan fried with olive or coconut oil and a pinch of himalayan salt), rinse all veggies and dry spinach.

    Dice onions, mushrooms, toms and peppers.

  3. 3

    When chicken is fully cooked, drain any excess olive oil, and slice to bite sized pieces.

    In a large glass bowl, add spinach along with veg and chicken. Drizzle ranch dressing on. Season with ground black pepper if you like, and enjoy!
