Ingredients

30 mins
2 servings
  1. 2Large Mushrooms to stuff
  2. 3cherry peppers in brine
  3. 1small amount of mixed sweet peppers for the filling
  4. 4 sliceschorizo cut into little cube shaped
  5. 1small drizzle of oil on both
  6. 2 tspmozzerella grated cheese
  7. 1 pinchdried basil for each mushroom filling
  8. 6Sundried tomatoes for their strong flavour
  9. PinchSalt
  10. 1/2 tspcracked black pepper between the 2 mushrooms
  11. 2 tspvirgin olive oil share between two mushrooms
  12. 1 tblsgrated mozzerella cheese for the finish
  13. 2 sheetstin foil

  1. 1

    Take the root from the middle of the mushroom

    Start adding all the ingredients to the inside of the musroom not the last bit of cheese thats for the finish

    Add a little drizzle of oil on both.

    Pour some olive oil over the stuffed mushroom

    Lastly add the cheese on top.

    In a small oven dish line the bottom with tin foil but have enough over to cover the top loosley. A rub a little oil on the bottom of the tin foil to stop the bottom of the mushroom sticking

    Add to a pre heated oven for 15 minutes 180 medium heat

    Then uncover the foil and push it out the way and finished cooking for 10 minutes so its browned on top.

Cookpad founder Member Ambassador, Also a Cookaholic.I love this Cookpad Site, Recipes, friends, interesting people and outstanding recipes, and able to see and to taste food from all over the world. i have learned so much more here, spices , herbs and lovely recipes of different cultures. also experimenting mixing different herbs and spices and making my own creations .I have cooked for my family since I was 14yrs, home from school as my Grandmother could no longer cook she was 91yrs, my Dad worked and there was only me so I learned quite quick and have always enjoyed it. I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
