I came across a video for this on YouTube in my never ending quest for new and exciting side items. While rice-ah-roni definitely isn't 'new' when you avoid overly processed foods, finding a homemade recipe for it becomes pretty exciting. Ingredients

6 servings
  1. 3 tbsp.unsalted butter
  2. 1/2yellow onion, diced
  3. 1 cuporzo pasta (or broken up spaghetti would be fine)
  4. 2 clovesgarlic, minced
  5. 1 cuplong grain white rice (I use Jasmine rice)
  6. 3 cupsunsalted chicken broth
  7. 1 tsp.salt
  8. 1/2 tsp.salt free all purpose seasoning
  9. 1/4 tsp.black pepper, garlic powder, paprika, dry mustard
  10. 1/8 tsp.cayenne, turmeric, coriander
  11. 2 tsp.dried parsley

Steps

  1. 1

    Heat the butter over med-high heat in a large, deep skillet with a tight fitting lid. Once it's melted, add the onion and the orzo. Cook, stirring often, until the onion is translucent and the orzo has begun to turn golden.

    Stir in the seasonings (except for the parsley), the garlic and the rice. Cook and stir for another minute or two. Then add in the broth and let it come to a boil.

  3. 3

    Place the lid on and turn the heat to low. Let this cook, covered, without lifting the lid for 17 minutes. Then turn off the heat, but leave the skillet undisturbed with the lid still on for an additional 5 minutes.

  4. 4

    After the 5 minutes are up, remove the lid, add the parsley and fluff with a fork. Serve immediately and enjoy!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
