Slice the vegetables

Heat oil and temper the mustard seed and broken pieces of red chilli

Add the sliced vegetables and saute

Add salt and turmeric powder and cover

As the vegetables get golden in colour and soft add sugar and mix

Fry on high heat and serve it with plain rice
