In a pan heat some oil and the potatoes and cook for 1 minute

Add the cream and cook till potatoes are cooked

Put them in a blender and blend till smooth

Put back in the pan and season with bay leaf and let simmer for 1 minute

Serve in a soup bowl and garnish with cheese and spring onion
