I always make jam from plum-type fruits using the whole fruit, including the peel, since I love the texture of the peel. I tried making tomato jam in the same way, and it was delicious.

Ingredients

1 serving
  1. 250 gramsTomato
  2. 100 gramsGranulated sugar
  3. 1 tspLemon juice

Cooking Instructions

    Wash the tomato and take off the stem end. Cut into 1cm dices. Put the tomato into a pan with the sugar.

    Bring to a boil over high heat.

    Skim off any scum. Add the lemon juice.

  4. 4

    Simmer for 10 minutes. When it becomes thickened, it's done.

    This came up to one 8cm high jar full.

    Great on pancakes.

    Combine with your favorite cheese and put it on toast. It's addictively delicious!
