Prawn and New Potato Stew

Wanted to make a quick meal for lunch. I used the smaller potatoes because I could not find new potatoes with plenty of flavour (e.g. Jersey Royals, Maris Piper, or Nicola). Did not take a full 1 hour to make. The key is multi-tasking.

Wanted to make a quick meal for lunch. I used the smaller potatoes because I could not find new potatoes with plenty of flavour (e.g. Jersey Royals, Maris Piper, or Nicola). Did not take a full 1 hour to make. The key is multi-tasking.
Cooking Instructions

Cook the new potatoes in lightly salted, boiling water for 15 minutes, until tender. Drain and return to the pan.

Meanwhile, finely chop the cilantro and crumble the dried chilli.

Heat the oil in a pan and fry the garlic for I minute. Pour in the chopped tomatoes.

Add the chilli, coriander, and 90ml/6tbsp water to the pan. Bring to a boil, reduce the heat, cover and simmer gently for 5 minutes.

Stir in the prawns and the cooked new potatoes and heat briefly until they are warmed through. Be careful not to overcook the prawns or they will quickly shrivel, becoming tough and tasteless. for

Spoon the stew into shallow bowls and serve sprinkled with the remaining coriander, torn into pieces. Serve with bread and salad, or steamed seasonal vegetables.

I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. My mother's version only had bacon and potatoes in it but I've added vegetables to make it tastier.Beware of burning, since all you have to do is leave it on the stove.Using 'Wagaya no Banou Tsuyu' or any Japanese noodle dipping sauce should be fine.
