Ingredients

  1. 4 tablespoonsolive oil
  2. 14 ozandouille sausage, cut into 1 inch pieces
  3. 3 clovesgarlic, minced
  4. 1red bell pepper, sliced thin
  5. 1 1/2 cupcut okra
  6. 1small zucchini, cut into 1 inch slices
  7. 16 ozuncooked penne
  8. 1 pintheavy cream
  9. 2 quartswater
  10. 4chicken bullion cubes
  11. 2 tablespoonscajun seasoning
  12. 1/2 tablespoonsmoked sweet paprika
  13. 2 cupsMonterey jack cheese, shredded

  1. 1

    In large oven safe pot, add olive oil over medium-high heat.

  2. 2

    Add sausage, stir. Let it start to brown a bit.

  3. 3

    Add garlic and peppers. Stir until fragrant.

  4. 4

    Add zucchini and okra to pot.

  5. 5

    Add paprika to sausage and veggies in pot. Stir to combine. Cook for just a few moments, then remove from pot and save for later.

  6. 6

    Add water and bullion to pot. Bring to boil.

  7. 7

    Add pasta to boiling water. Cook 10 minutes.

  8. 8

    Add cajun seasoning and heavy cream to pasta pot. Stir to combine. Bring back to boil. Let sauce reduce.

  9. 9

    At this point, I stirred in about a half of a cup of my cheese into the sauce to let it get a little extra creamy.

  10. 10

    Add the sausage and veggies back into pasta dish.

  11. 11

    Top with remaining cheese. Pop in oven under broiler for about 3-4 minutes, just long enough to give it a light golden crust on top.
