Ingredients

  1. For masala
  2. as neededOil
  3. 1/8 teaspoonfenugreek seed
  4. 1 teaspooncumin
  5. 1 teaspooncoriander seeds
  6. 1 teaspoonpoppy seeds
  7. 1 teaspoonsesame seeds
  8. 2 tablespoongroundnut
  9. 2 tablespoongrated coconut
  10. For puree
  11. 4tomatoes
  12. 1big size onion
  13. 1ginger
  14. 2-3green chillies
  15. 4-5slit small brinjal
  16. as neededOil
  17. 3 teaspoondhaniya powder
  18. to tasteSalt
  19. 1 teaspoonTamarind pulp
  20. 2 teaspoonturmeric powder
  21. 2 teaspoonred chilli powder
  22. 1 teaspoonhing
  23. 1 teaspoonjeera

Steps

  1. 1

    Take all the ingredients of masala in kadai and saute

    Let it cool and make paste by grinding in the mixer

    Make puree and keep aside

  4. 4

    Take another kadai put oil and put slit brinjal and let it fry or cook till it becomes soft on medium flame

    Take out brinjal and keep aside

    In kadai take oil put jeera, chopped green chillies, hing and saute it

  7. 7

    Add puree and mix well, add turmeric powder, red chilli powder, dhaniya powder and salt mix well

  8. 8

    Add the paste and mix well add water and tamarind pulp

  9. 9

    Cook till first boil

  10. 10

    Add brinjal mix it and cover for 5 minutes to cook

  11. 11

    Garnish with green coriander leaves

  12. 12

    Bhagara baingan ready to eat
