Ingredients

15 mins
3-4 servings
  1. 4karelas(bitter gourd)
  2. 1 tbspbesan
  3. 1 tbspoil(i have used mustard oil)
  4. 2spoon salt
  5. 1spoon red chilli powder
  6. 1spoon fennel seeds powder
  7. 1spoon coriander powder
  8. 1/2spoon turmeric powder
  9. 1/2spoon garam masala
  10. 1 tsptamarind paste
  11. 1 tspcrushed jaggery

Steps

  1. 1

    Scrape the karelas. Sprinkle salt on them and keep them in a plate for 30 mins,so that bitterness of karelas is reduced. Karelas will leave water. Dont throw the peels.It will be used in making masala

  2. 2

    Wash the karelas,give a slit and hollow them. If there are no seeds we can use the inside part for making stuffing

  3. 3

    Heat up a pan. Put 1 tsp oil,add fennel seeds powder,then leftout of karelas and stir fry.Now add besan and roast. After 5 mins add all the masalas and roast for 5 more mins. Let it cool

  4. 4

    Fill the karelas with this mixture by pressing.

  5. 5

    Heat up a pan. Put rest of the oil and cook Karelas covered. Turn them at regular intervals so that they get cooked from all sides.

  6. 6

    Finall add jaggery and tamarind pulp and cook for few more mins.

  7. 7

    Khatte meethe karelas are ready.
