Besides being nutritious, Besan is also a good stuffing substitute for those who don`t use onion.People who dont like bitterness in Karele are definitely going to like this sweet and tangy Karelas.

Scrape the karelas. Sprinkle salt on them and keep them in a plate for 30 mins,so that bitterness of karelas is reduced. Karelas will leave water. Dont throw the peels.It will be used in making masala

Wash the karelas,give a slit and hollow them. If there are no seeds we can use the inside part for making stuffing

Heat up a pan. Put 1 tsp oil,add fennel seeds powder,then leftout of karelas and stir fry.Now add besan and roast. After 5 mins add all the masalas and roast for 5 more mins. Let it cool

Fill the karelas with this mixture by pressing.

Heat up a pan. Put rest of the oil and cook Karelas covered. Turn them at regular intervals so that they get cooked from all sides.

Finall add jaggery and tamarind pulp and cook for few more mins.

Khatte meethe karelas are ready.
