Ingredients

  1. 2 tbspolive oil
  2. 1onion, sliced
  3. 1garlic clove, crushed
  4. 1 tbspchopped thyme
  5. 400ml/14 fl oz vegetable stock
  6. 200g/7 oz basmati rice
  7. 4 tbspcoconut milk
  8. 400g/14 oz canned red kidney beans, drained and rinsed
  9. Salt & pepper
  10. Fresh thyme sprigs, to garnish

Steps

  1. 1

    Heat the oil in a large saucepan, add the onion and fry over a medium heat, stirring, for about 5 minutes until soft.

    Add the garlic and thyme and stir-fry for 30 seconds. Stir the stock into the pan and bring to the boil.

    Stir in the rice, then reduce the heat, cover and simmer for 12-15 minutes, until the rice is just tender.

    Stir in the coconut milk and beans, then season to taste with salt and pepper.

    Cook gently for 2-3 minutes, stirring occasionally until thoroughly heated. Serve hot, garnished with thyme.
