Heat the oil in a large saucepan, add the onion and fry over a medium heat, stirring, for about 5 minutes until soft.

Add the garlic and thyme and stir-fry for 30 seconds. Stir the stock into the pan and bring to the boil.

Stir in the rice, then reduce the heat, cover and simmer for 12-15 minutes, until the rice is just tender.

Stir in the coconut milk and beans, then season to taste with salt and pepper.

Cook gently for 2-3 minutes, stirring occasionally until thoroughly heated. Serve hot, garnished with thyme.
