Ingredients

  1. 1 cupGram flour
  2. 1 cupButtermilk(sour)
  3. 1 cupWater
  4. 1/4 tspTurmeric powder
  5. pinchAsafoetida
  6. Salt as per taste
  7. For filling :
  8. 2-3 tbspFresh grated coconut
  9. 2 tbspChopped coriander
  10. 1/4 tspLemon juice
  11. 1-2Chopped green chillies
  12. 1/4 tspSalt
  13. 1/4 tspSugar
  14. For tempering :
  15. 2 tbspOil
  16. 1 tspMustard seeds
  17. 1 tspCumin seeds
  18. 1 tspSesame seeds
  19. pinchAsafoetida

Steps

    Mix the gram flour, salt, asafoetida, turmeric together in a bowl.

  2. 2

    Add buttermilk and water gradually to make a smooth paste.

  3. 3

    Transfer this mixture into the pan and cook it on low flame and stir continuously for about 15 to 20 minutes so that lumps do not formed.

  4. 4

    After the gram flour mixture is completely cooked it will become a smooth paste. Switch off the gas.

  5. 5

    To check whether batter is perfectly cooked spread little amount of batter on smooth surface. Leave for a minute. If it easily peeled out batter can be perfectly cooked otherwise the batter needs to be cook more.

  6. 6

    Using spatula take some mixture and spread it evenly on smooth surface quickly.(you can spread it on back of the stainless steel plate or baking tray.)

  7. 7

    You have to be quick with remaining batter too. Since even a bit of cooling the batter becomes difficult to spread.

  8. 8

    Cool it down for 5 minutes. Cut it into strips using a knife. Fill the strips with the coconut and coriander mixture as above mentioned.

  9. 9

    Gently roll each strip. Arrange the roll in serving plate.

  10. 10

    Heat the oil in small kadhai. Add mustard seeds, cumin seeds,sesame seeds and asafoetida and pour this hot tempering on roll evenly.

  11. 11

    Now delicious suralichyi vadi is ready to eat.
