Marinate solid lean beef or mutton meat (thinly sliced like shown in pic)with onion paste, ginger garlic paste, papaya paste, chilli powder, chaap masala(readily available in market or u could use biryani garam masala as well) salt and pepper and curd. leave it covered for 30 min.

Then heat oil and ghee in a heavy bottom flat kadhai/pan. then add the chaap pieces to the hot oil one by one. reduce the flame. cook the chaap on low flame for about 1 hour.

Check the chaap. if it's tender then increase the flame to medium and dry out the water. stir occasionally and dry out the watr. cook till the chaanp is nice and brown. serve the chaap with naan, rumali roti or paratha or eat it just like that with a dash of lemon.
