Ingredients

  1. 2 1/4 poundsfine bulgur wheat (about 1 kilogram)
  2. 1 1/8 poundslean ground beef or lamb for kibbeh (about 500 grams)
  3. Kibbeh spice blend
  4. Pinchcinnamon
  5. Pinchcumin
  6. For the filling:
  7. Finely chopped onion
  8. Ground beef or lamb
  9. Pinchallspice
  10. Salt
  11. Vegetable oil
  12. Pinchseven spice blend
  13. Small pinch of flour
  14. Small pinch of cinnamon

Cooking Instructions

    Soak the bulgur in a little water with salt, kibbeh spice blend, and the other spices. While the bulgur is soaking, prepare the filling.

    Finely chop the onion and sauté it with a pinch of salt until it softens. Add the ground meat and cook until any odor is gone. Add the spices, stir for a bit, then remove from heat.

    Knead the bulgur well, then add the ground meat for the kibbeh. Knead again until the mixture forms a cohesive dough.
