Craving some delicious pozole! Perfect for those who don't eat pork, and to satisfy that classic Mexican craving.

Rinse the hominy well. In a large pot, cook it with the onion and garlic. After 60 to 90 minutes, add the chicken.

Soak the chiles in boiling water until soft. Blend them with a pinch of cumin, a pinch of oregano, a pinch of salt, black pepper, the onion, and only half the head of garlic (the same one used for the hominy). Strain the sauce and add it to the pozole. Bring to a boil until the hominy kernels start to burst. Season again if needed (spices), then add the chicken bouillon cube and salt to taste. Let it simmer a few more minutes. Done!
