I remember back in the day, whenever there was a family memorial, my aunts would make all kinds of cakes like bánh da lợn, xôi vị, banana cake, bánh ít, bánh bèo, and more. But for me, I always loved bánh da lợn the most because I’ve had a sweet tooth since I was little and really enjoy desserts. So whenever I went to a party, I’d eat less of the main dishes to save room for the sweet treats served at the end. Especially at weddings, I’d always check the menu to see what dessert would be served. If it was fruit, I’d eat more savory dishes, but if it was cakes or ice cream, I’d save room to enjoy more at the end of the meal.

Ingredients

1 hour 15 minutes
1 cake, about 12 inches long
  • I/ Opaque Layer:
  • 2 1/2 cupstapioca flour (about 300 grams)
  • 1 3/4 cupscoconut milk (about 420 ml)
  • 1 3/4 cupsgranulated sugar (about 380 grams)
  • 1 teaspoonvanilla extract
  • II/ Clear Layer:
  • 2 3/4 cupspotato starch (about 350 grams)
  • 1 1/2 cupscold water (about 360 ml)
  • 1 3/4 cupsgranulated sugar (about 380 grams)
  • 1 teaspoonvanilla extract

    For the opaque layer: Mix all ingredients together until smooth, then strain to remove any lumps.

    For the clear layer: Mix all ingredients together until smooth, then strain to remove any lumps.

    Add a pinch of salt to each batter.

  4. 4

    Bring water to a boil in a steamer. Grease the cake pan and line it with plastic wrap. Place the pan in the steamer to heat up.

  5. 5

    Ladle alternating layers of each batter into the pan. Steam each layer for at least 10 minutes. Only add the next layer once the previous one is fully cooked. Repeat until all the batter is used.

  6. 6

    Once the cake is cooked, remove it and let it cool completely. It tastes even better if you let it sit overnight before serving.
