Steps

In a heavy based pan add
cooking oil,
Garlic,
Ginger,
Salt,
Turmeric powder,
Garam Masala,
Onions,
Lamb chops,
Bay leaf,
Cinnamon stick,
Aniseed,
Peppercorn
Mix all the ingredients together and cook for 45min on medium heat stirring occasionally. - 2
Add the Madras Curry powder and green chillies and cook for a further 5 min or until the oil separates from the mixture.

Add the quartered tomatoes and tomato puree and stir and leave to cook for a further 10 min

Add the boiling water and leave to simmer for 10 min.

Garnish with the coriander, leave to stand for 5 min and serve with boiled rice or naan.
