Ingredients

  1. 2medium eggplants, cut into round slices
  2. 1 tbspchilli powder
  3. 1 tbspgarlic powder
  4. 1/4 tbspginger powder
  5. 1/2 tbspgaram masala
  6. pinchtumeric powder
  7. 1/2 tbspdried mango powder or chat masala ( optional)
  8. salt
  9. oil
  10. rice flour

Steps

  1. 1

    Mix eggplants with salt and let it soak for 30 mins. It removes bitterness. Then wash the eggplant wit water and dry .

  2. 2

    Mix chilli powder, garam masala, garlic powder , ginger powder, chat masala or dried mango powder and mix well and coat the eggplants with it and let it marinate for 30mins

    Coat the eggplant slices with rice flour or corn flour and dust off the excess. Shallow fry the slices on pan

    After cooked, transfer them on absorbent paper to remove excess oil

    Serve with rice
