QF (Quick Fix) Basic Biscuits (Cinnamon/Blueberry variations)

Using my Basic Baking Mix, I used to make these biscuits every Saturday morning and had some to spare for quick breakfasts during the week.
I learned to make Bojangles(R) biscuits a long time ago and fashioned my homemade cinnamon and blueberry biscuits after those appearances.
While I use a 2-inch cutter for a 3-inch biscuit, this dough handles well for smaller or larger sizes. The evenly cooked key is rolling equal depth across the dough before cutting.

Preheat oven to 450°

Line pan with parchment paper

In measuring cup, add vinegar to milk. Stir and set aside.

Measure mix into bowl. Stir in milk mixture until thoroughly blended. Dough should be sticky.

Dust rolling mat with A/P flour. Turn dough onto mat. Knead 3-4 times until well blended, but not overhandled.* Overhandled dough is best for cinnamon and/or blueberry biscuits as the texture holds together better.

Roll and cut to desired shapes leaving a little amount of space between cuts as possible.

Bake for 10 minutes, then brush with melted butter. Finish baking until golden brown. Glaze if desired.

Nutrition information does not include variations. Cinnamon biscuit variation: Mix 1/2 C. sugar, 1 Tbs. cinnamon, and 1/4 C melted butter in bowl. Press hollow into center of biscuits and fill with cinnamon mixture before baking. After baking, glaze, if desired.
