Yellow Pickles (Indonesian Pickles)

Ingredients

20 mins
  1. 250 grcucumbers, removed seeds and cut into stick shape
  2. 150 grcarrots, peeled and cut into stick shape
  3. 50 grgreen friggiteli pepper
  4. Make puree:
  5. 4 clovesshallot
  6. 3 clovesgarlic
  7. 3candlenuts
  8. 2-3 cmfresh turmeric
  9. 2 tbspsalt
  10. 1/2 tbsppepper
  11. 2bay leaves, ripped
  12. 1 stalklemongrass, crushed
  13. 2-3 tbspvinegar
  14. 1/2 tspsugar
  15. 250 mlwater
  16. 2 tbspoil

Cooking Instructions

  1. 1

    Preheat oil into wok, sauted puree bay leaf and lemongrass about 2-3 mins till smells good and bit brown. Pour water and stir till bubble comes.

    Add cucumber, carrot and chilli into wok and boil in 2 mins till half cooked. Seasoning with vinegar and sugar. Take out from stove and ready to serve. :)

    The pickles ready to serve with fried noodles or fried rice or you can make this for your sandwich 😊
