I tried using Ndengu as a substitute for peas/ meat and it was very tasty! This is also a great way to use left over rice or Ndengu.

I tried using Ndengu as a substitute for peas/ meat and it was very tasty! This is also a great way to use left over rice or Ndengu.
Steps

In a heavy bottom sufuria, heat your oil and add your chopped onion

Cook the onions until they soften, add the garlic and ginger
- 3
When the onions start to brown, add your grated carrots and fry them until they soften
- 4
Add your dry spices and soy sauce
- 5
Add your Ndengu and simmer for about 3 minutes
- 6
Stir thoroughly and add about half a cup of water to the ndengu
- 7
Add your pre cooked rice, let it cover the Ndengu completely. Do not mix it in at this stage. Cover and reduce the heat to the minimum. Use a well fitting lid that will enable the rice to steam

After about 4-5 minutes, using a fork mix the rice and Ndengu thoroughly

Serve with a side salad (optional)
