Steps

Wash all equipment, make sure all soap is completely rinsed off.

Dissolve the sugar in water by stirring (heating not required)

Place the water Kefir grains into your fermenting container and add the sugar water or fruit juice.

Close lid or cover with cloth/ rubber band and leave to ferment for 24 to 48 hours in a warm, dark place. The warmer the environment the faster the process. Once fermented you will notice a change in smell and taste. It may not be fizzy yet, leaving it out for secondry fermentation will help add fizz.

After fermentation, strain to speparate the grains. Keep the water Kefir grains in another sugar water. You can keep them sugary water.

Pour the water Kefir into airtight bottles and add any additional fruits or flavouring. Then leave them in a dark place for a further 24-72 hours for the second fermentation which will produce carbonation. Replace fruits every 24 hours until you get the desired carbonation. When ready, chill it and serve.
