Darbari masala paste: dry roast all the ingredients and dry grind it in a mixer jar first. when it's turned into fine powder then add some water and grind into a fine paste. keep aside

Heat oil in a pressure cooker. add the onions and fry till light brown. then add the mutton pieces and mix well for 5 mins. then add ginger garlic paste, chilli powder, turmeric powder, salt and tomato puree. mix well for 5 mins. then add 2 cups water and pressure cook till 4 whistles.

Then turn over the meat into a kadhai. add the darbari paste and cook well. cover the lid and let the mutton cook in the darbari masala and absorb the flavour and aroma on slow flame. let the water dry and keep stirring so that the masala does not get burnt. (bhuno)

Once the mutton is soft and tender and the gravy is done drizzle some cream or garnish with chopped coriander.serve hot with pulav or paratha.
