A solution for breakfasts or evening tea snack whenever you are tired with bread or the usual snacks. Very delicious.
Steps

Soak rice for 6-12hrs or overnight

In a blender put half rice and coconit milk and blend. Continue with the process. Ensure you blend until fine.

Add sugar, parsley, egg whites and yeast to the blended mixture and fold in.

Cover and let rise for an hour or more depending on room temperature.

Fold in to ease the bubbles formed.

Grease the baking tray using cooking fat. Place in a warm baking tray.

Preheat at 200C and bake at 180C for 40mins until golden brown.

While still hot and in the baking tray, brush the top with cooking fat or margarine(not too much).

Cover the tray and let cool covered. This ensures that the mkate wa sinia comes out smooth.

Serve with milk, tea, juice.
