Heat 2 tablespoons of oil in a pot. Sauté the chopped onion, garlic, and bell pepper. Add salt to taste.

Once the vegetables are golden, add the chicken pieces. Brown them on both sides.

Meanwhile, blend the tomato with 2 cups of water (about 480 ml) and 1/2 teaspoon of annatto or color seasoning, if available.

When the chicken is browned on both sides, add the blended tomato mixture and the potatoes, sliced into rounds. Add the cilantro and check the salt, adding more if needed.

Cook over medium heat for about 25 minutes. When you poke the potatoes with a fork and they're soft, it's ready!
