5-6small sweet potatoes, peeled and roughly chopped
6-7garlic cloves, whole, crushed

A fewsprigs of fresh thyme
Drizzle of olive oil
1-2 tbsphoney
6bacon rashers, roughly chopped
to tasteSalt
to tasteGround black pepper

Steps

Preheat oven to 200c.

Line a baking tray with greaseproof paper.

Add all the ingredients to the baking tray and toss altogether well.

Transfer to oven and bake for 40-45 minutes.

Do check on it from time to time and mix occasionally so the top layer doesn't burn.
